Abstract

Were evaluated the physical attributes of avocado from Ribeirão Preto –SP, region. Throught the parameters during the 2000 and 2001 crop season, fresh weight, shape index, percentages of pulp, peel and seed, texture of fruit with and without skin and color skin. Avocado “Breda” fruits showed a better quality with high fruits firmness in mature fruit and unripe fruit suggestind greater for handing, and better potencial for commercialization and postharvest conservation: “Fortuna” avocado fruits cultivar presented higher percentages of pulp (82,46% in unripe fruit and 82,14% in mature fruits) suggesting more suitable for industrialization; the differences in the fresh weight and in the percentage of pulp give evidence of the high variability between the studied cultivars.
